Lunch in Albi
Albi was wonderful. The day was bright and the gargoyles on the cathedral came to life in the strong play of sun and deep shadow.
Lunch was less than wonderful. We were seduced by tables set out in an ancient cobblestone courtyard under huge square umbrellas, but the food was sorry mass-produced tourist fare.
Dinner made up for everything. It was the last night and Nese outdid herself.
Dinner Menu
- Composed individual salads with shrimp, prunes wrapped in bacon, artichoke heart, arugula with a balsamic mustard vinaigrette
- Cuisse de Canard (duck legs) roasted on a bed of tomatoes and onions
- Caramelized Carrots
- Chocolate cake in caramel sauce
Recipes
Caramelized Carrots
Peel and cook carrots until al dente. Cut into ½” pieces and sauté in butter and a little sugar until thoroughly cooked.
Chocolate Cake
Preheat oven to 350 degrees
Melt together:
– 150 grams butter
– 200 grams chocolate
Mix together:
– 6 egg yolks
– 100 grams sugar
Carefully pour the chocolate mixture into egg mixture.
Beat 6 egg whites until stiff and carefully fold into the above
Bake in tart pan for 35 to 40 minutes

Nese’s food was absolutely fabulous! We ate like queens, and best of all and most remarkable considering the outstanding food, I didn’t gain any weight while there! I think her abundant use of fresh fruits and vegetables and the amazing variety were the keys to no weight gain. Also, she must not use much fat in her delightful cooking. I’m considering going back to learn more about how she cooks. Nese is a Treasure!
